Orange Ginger Chicken

Today, we will be learning a new recipe which is the Orange Ginger Chicken. This is one of my most favorite entree dishes to cook for families in a cold night.

  • Prep Time: 5-10 minutes
  • Cook Time: 10-12 minutes


  • 1 Tbsp. coconut oil
  • 1 lb. boneless skinless free-range chicken breast
  • 3 Tbsp. ginger, minced finely
  • 4 oranges juiced plus zest of one orange
  • 2 Tbsp. honey
  • 1 Tbsp. coconut oil
  • 1 tsp. red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro or mint for garnish

Wash and pat dry the chicken breast(s) and cut crosswise into one inch strips, then cut again to cube. Season the chicken with salt and pepper.

Heat a medium-sized skillet on medium heat, add the coconut oil add the chicken and sauté, turning constantly until the chicken is cooked (about 3 to 5 minutes.)

Remove the chicken from the pan to a plate or bowl.

Put the pan back on the heat, add the second tablespoon of coconut oil, and then add the ginger and sauté for 2 to 3 minutes until it turns golden brown.

Add the honey, orange juice and zest. Reduce heat to low and simmer for five minutes.

Add the red pepper flakes. Return the chicken to the pan and stir until all the chicken is well coated in the sauce. Salt and pepper to taste.

Serve over rice, quinoa or a bed of fresh chopped greens. Garnish with fresh cilantro or mint.
