Fresh Fruit Salad with Shredded Coconut

Ingredients
- 2 large bananas
- 2 peaches or nectarines
- 2 large slices cantaloupe
- 6 to 10 strawberries
- 1 to 2 handfuls of blueberries
- 1 to 2 tsp. fresh lemon juice
- ½ cup shredded coconut
Directions:
Peel bananas, cut slices of cantaloupe, wash nectarines or peaches and berries and cut all the fruit into three-quarter inch pieces and place in large mixing bowl.
Add lemon juice and toss until well mixed. Serve into individual bowls and top with coconut. This salad also makes a great topping for homemade crêpes, pancakes or waffles for a lovely carb-up Sunday breakfast.
This is one of those breakfast dishes that just makes summer what it is. It gets better after about 24 hours in the refrigerator, or even if prepared the night before. The lemon juice works its way into the fruits and releases the juices. Add the coconut on top just before serving.
Tip: This fruit salad is also amazing with homemade vanilla raw milk or coconut milk ice cream. Just don’t forget the coconut!
